INSTANT COFFEE
Instant coffee is made from roasted and ground coffee that is brewed in a similar way to percolation but is highly concentrated. There are then two different methods of creating the gritty powder that can be reconstituted immediately in the cup.
The extracted coffee can be spray-dried or freeze-dried, whichever method is used determining the consistency of the product. Both of these methods remove the liquids by drying, leaving behind only the coffee solids. Spray-drying consists of misting the brew into dry, hot air, evaporating the liquids, and leaving a fine coffee powder at the bottom of the machine. Sometimes this powder is collected and pressed into granules for dosing; otherwise, it is packaged as is in fine powder form. Freeze-drying involves freezing the extracted coffee and then placing it in a vacuum and extracting the liquids. Cut into granules, the coffee is subsequently packaged and shipped. Some studies have shown that of the two methods, freeze-drying retains more coffee flavor.4
While instant coffee often gets a bad rap, the concentration that occurs during the extraction process is said to lead to a higher antioxidant content than freshly brewed coffee. However, due to the ratio of water to coffee in traditional preparation methods, instant and regular ground coffee have similar antioxidant levels. In essence, a cup of instant is comparable to a cup of percolated coffee, with all the flavors and aromas being preserved by drying.
The negative view of instant coffee may be largely attributed to the fact that, because it is perceived as a low-value product, poor-quality beans are often used and so, regardless of the method of brewing, the base ingredient is incapable of yielding a good brew. Various coffee brands will every now and then try to push an instant coffee line, but it remains a tough challenge in many markets for the product to shake off its downbeat image.
